How you cook potatoes determines their health benefits

Potatoes are packed with nutrients and can be part of a healthy diet, but new research highlights that French fries may undo those benefits. The study shows that it’s not the potato that’s the problem, but the frying process, which adds excess fat, salt, and calories. Enjoying potatoes in their natural or baked form can provide vitamins, fiber, and energy without the health risks associated with fried versions.
