Sourdough vs. regular bread

Sourdough is often seen as a healthier alternative to regular bread, largely because of its fermentation process. The natural bacteria and yeast used to make sourdough can help break down some compounds in flour, which may make the bread easier to digest and can modestly affect how quickly blood sugar rises. But sourdough is not automatically healthier than every other loaf: its nutritional value still depends on the type of flour, fiber content, added ingredients, and portion size. A whole-grain sourdough, for example, will generally offer more fiber and nutrients than one made primarily with refined white flour.
