How to boost kale's health benefits

Researchers from the University of Missouri's College of Agriculture, Food and Natural Resources (CAFNR) have found that oil-based dressings or sauces can significantly improve both the nutrient absorption and taste of kale. The study reveals that the fats in these dressings help the body absorb more of the beneficial nutrients found in kale, such as vitamins A, D, E, and K, which are fat-soluble. In addition to boosting the health benefits, the oil also enhances the flavor, making kale a more enjoyable and nutritious choice for meals.
